   I haven’t been in the Los Angeles riot zones (from the 1960s and 1990s riots) in about fifteen years, but a lot of those areas became economic dead zones even in the early 2000s.

    It just occurred to me after looking for flour in my pantry for a roux, the #should-be-obvious thing that this article missed is that we DO have soft-wheat flour up #north, it's just called "cake flour".
